refreshing summer drinks

Whether you’re lounging in the garden, hosting a barbecue or just looking for a way to beat the heat, these drinks are easy to make, packed with flavour, and a healthier alternative to shop-bought options.

Watermelon and Lime Slushie

Works perfectly for any occasion.
I tend to remove some seeds by cutting the melon to 2-inch pieces, and leave the rest. No need to add any sweetener. Refreshing!

Ingredients for 2 portions

  • 2 cups of diced watermelon, deseeded best you can
  • 1 cup of ice cubes
  • juice of one lime

Apple and Cucumber Refresher

Cucumber works great with apple and mint! If your apple is sweet enough, there’s no need to sweeten it, but if you prefer it sweeter, add a little maple syrup.

Ingredients for 2 portions

  • 1 whole green apple (granny smith is best)
  • 2.5 inch (7cm) piece of cucumber
  • 1/2 cup of ice
  • 5 medium mint leaves

Iced Latte

No special ingredients needed. I use brewed decaf and let it cool down, and add plant based milk. No need for any fancy syrup. Sweeten it with a little honey – it works a treat.

Ingredients for 2 portions

  • a handful of ice cubes
  • 300ml of cold coffee
  • 300ml of frothed milk
  • sprinkle of cinnamon or cocoa powder

Nectarine and Lime Infusion

Subtle, summery slurp for a hot day. When you just need to make your thirst go – water, with a little extra. Can be made in a water bottle to go.

Ingredients for 2 portions

  • 2 nectarines, stones removed, sliced
  • 2 limes, sliced
  • 1/2 cup of ice cubes
  • 600ml of fizzy water

Ginger and Mint Blended Lemonade

Super aromatic, super refreshing, full of flavour and vitamin C, and great for after a meal. Peel the ginger and citruses and remove the pips.

  • 1 inch piece of ginger
  • 5 mint leaves
